It has been a slow start to the 2014 syrup season. The long cold winter seems to have held off the sap flow until now in early April. The storm that is hitting as I write probably will kick the sap flow into high gear. It seems the bigger the swings in the weather pattern, the better the sap flow. The freezing nights and warm days are needed to get the sap flowing, but the low pressure systems and snow storms seem to really get it rolling. We have set 125 taps and are waiting to collect enough for our first boil. We held off tapping until now after hearing from others about the slow start. I always look forward to the boiling of the sap, the aroma of the syrup, and especially the finished product. There is a real sense of accomplishment in being involved in producing this wonderful natural treat!
